@SaintRay was that what you were looking for or a bit more in depth? Lol

They look broiled, which is maybe what Ray was thinking...

Still delish... Ribeye is my favorite steak, with the possible exception of Outside Skirt Steak... (no pun, that is an actual cut of beef, you gutter minds...)

That's kind of what I figured, so that's why I answered the way I did.

Not broiled. I don't believe I've ever, personally, broiled a steak. Have done one in a skillet once. Wasn't my favorite. Much prefer a grill, whether gas or charcoal. Tonight happened to be charcoal. Threw them in the pan off the grill, slapped some butter on and tore in. The lady likes A1. She's a heathen.

Can't say I've ever tried that steak before Cheffy.

You answered it. I didn’t see the grill marks, so I was wondering how you cooked them.

I'm not sure why the grill marks didn't show up lol. Usually diamonds.

Speaking of great steaks....this bad boy mid-rare Porterhouse meet its match Saturday evening along with some Stilton Spinach.

By request, Mrs. Rays Porterhouse was a bit smaller.

We've had this discussion in the house....

If I had to pick one food group as the last available on earth, there needs to meat.

As long as Mrs Ray can get some iron from you a couple days a week that's all that matters .

Now remember , don't hoard that shit .

If you've ever had a great fajita anywhere in Texas, you've probably had it... Super beefy, a little chewy, really takes well to marinades, ONLY done on the grill...

Yep, skirt is what I use for fajita and quesadilla meat ....I flash grill mine about 2 -2.5 minutes per side and then set it on upper rack under low heat for a couple minutes and they usually come out perfect when sliced diagonal and thin...Aldi's has a real good skirt for 6$ per pound...

I have a guy who gets me the picanha cut of the sirloin...its a cut you find at brazilian steak houses. As i understand it, american butchers dont do this cut as the picahna part is divided into three other cuts we have

I advise you to ask a butcher to see if you can get it...its an amazing cut
